bell pepper, small diced ¼ cup
Hot peppers
(optional), minced 1

Zucchini or
summer squash, small diced ¼ cup
Fresh corn,
shucked and kernelled 2 ears
Garlic,
chopped 2
cloves
Onion greens
(optional), minced 2
tsp
Fresh summer
herbs (optional), minced 2 tsp
Cider
Vinegar splash
Salt and
pepper to
taste

In
a large, flat bottomed frying pan or skillet, melt the butter over medium low
heat.

Add
the onions and broad beans and cook for 3 minutes.

Add
the peppers and tomato and cook for 2 minutes.

Add
the zucchini and corn and cook for 2 minutes.

Add
the garlic and cook for 2 minutes.

Add
the fresh herbs and onion greens and cook for 1 minute.

Season
to taste with the salt, pepper, and vinegar.
